Hi all.

What is you favourite meal to cook as a carer? do you have any one pot recipes to share?

Here is my latest.

Beef bourguignon

Diced beef (you can use skirt or braising stake but it’s exspensive but average diced beef does the job eaisily)

bacon lardons (or chopped cooking bacon if on a budget)

Diced onion

Carrots (used half a bag so about 6) chunky chopped

celery thick cut (few sticks should do) chunky chopped

1 bottle red wine

rosemary stem

sage leaves

a bulb of garlic

2 oxo cubes disolved in 1 glass of hot water

1 table spoon of cornflour mixed with cold water into a paste (add ten mins before serving to thicken sauce)

A blob of tomatoe puree

(throw all of that in a big pan over night)

Next day

seperate carrots and celery and sauce, let them simmer while you brown the meat/onions and bacon lardons in a pan (add a lil oil) (it’s easier to pick the veg out and drain the sauce throw a collander), throw it all in a caserole dish including the herbs i just kept them whole and took them out when serving. I baked it until the carrots and celery were cooked. 10 mins before I served it I added the cornflour and popped it back it.

Serve with mash and kale (kale is like spring cabbage but cheaper and less prep)

We had the left overs with chips the next day or you could freeze for next week :slight_smile:

this is really easy to do as most beg you can get pre chopped to save even more time, what recipes cure your carer fatigue?

I don’t so much have a favourite as a few useful standbys that I can throw together quickly.

I find a basic Bolognese style sauce easy to adapt to make Cottage Pies, Bolognese, Lasagne, Pasta bakes, and Chilli. So having a couple of Bolognese tubs in the freezer gives me an easy win.

@KellySue , ooh, good question. A few that spring to mind are: marinated steak or pork chops, stir fry with noodles (with Hoisin sauce or Sweet and Sour sauce), curry, Shepard’s Pie, various takes on hot pot, Irish Stew (the proper version) and the occasional roast dinner. Your recipe looks great. When my throat is better, I’ll cook some. :slightly_smiling_face: :face_savoring_food:

I love the mince and onion hack, my mum taught me that one and it’s been a life saver. Left over bolognese on a toasted baguette with cheese is one of my faves. Have you tried a good old bubble and squeek? great for left over sunday dinners.

Not in a very long time. Used to have it often as a kid, usually on a Monday! Last time I had leftover spuds is a good while back. These days, the mash is mostly a mix of potato, sweet potato, swede and carrot. That has got me thinking…

When my fast growing grandson is here, I often do a large spaghetti bolognese, with lots of grated carrots done in the Magimix to save my hands. IF there are leftovers, some canned chilli beans turn it into a chilli con carne next day.
